
You take the warm wrap in your hands, feel the scent, feel its texture and then its taste… spiced and very comfort…
For falafel
- 400 g cooked chickpeas
- 1/2 red onion
- 2 tbsp flour
- 1 tsp ground cumin
- 2 tsp fresh coriander, chopped
- 1 tsp chopped fresh mint
- 1/2 tsp baking powder
- salt
- olive oil
For wraps
- 4 small tortillas
- 6-8 slices halloumi cheese
- 2 handfuls lettuce
- 4 tbsp (homemade) tomato sauce
Preheat the oven to 220oC. Line a baking tray with baking paper.
To make the falafel mixture place the cooked chickpeas, red onion, flour, cumin, mint, coriander, baking powder and salt into a food processor and blitz until mixed well.

Divide the mixture into 8 pieces and form the falafels. Sprinkle the falafels with olive oil and bake for 15 minutes. Then sprinkle some more oil again and bake for another 10-15 minutes until golden.
Heat the non-stick frying pan. Fry the halloumi slices without adding any oil until they are golden-brown on both sides.
Take the tortillas and fill them with lettuce, fried halloumi slices, falafel and tomato sauce. Fold up the ends of tortillas and lightly warm the wraps on a non-stick pan.
