Salmon and quinoa salad

I am just a big fish eater. No matter roasted or cured, smoked or marinated, salmon always tastes dreamy.

(2 portions)

  • 1 avocado
  • 100-120 g smoked salmon
  • 3 tablespoon quinoa
  • 1/2 red onion
  • 1 large tomato
  • 1 cucumber
  • 1 tablespoon cider vinegar
  • 1 table spoon sugar
  • 4 tb sp extra virgin olive oil
  • 2 tb sp lemon juice

In a salad bowl, mix the vinegar with the sugar, then add cucumber and onion (separately). Set aside for 15 minutes, then drain.

Put the cooked quinoa, slices of salmon, avocado and tomato together. Add the mixture of olive oil and lemon juice, followed by drained cucumber and onion.

Add salt and pepper to taste. Serve immediately.
